In the Department of Food Engineering, education and research activities are carried out through collaboration with numerous universities, research institutes, and industries. Many projects are conducted at both national and international levels. In our laboratory, as a research team, we are engaged in the production of edible films, the production of nano-fibers through the electrospinning and electroblowing methods, and the monitoring of the physical, chemical, and sensory aspects of food throughout its shelf life. Encapsulation studies for food waste valorization are also conducted. Within our research group, we are working on the extraction of bioactive components such as proteins, polysaccharides, starch, phenolic compounds, etc., and studying their in vitro digestibility
