The National Research Council (CNR) is the largest governmental institute for scientific research in Italy. It covers almost all the topics of human knowledge. The Institute of Food Sciences is located in Avellino (Campania Region) and covers the research topics related to the study of food composition and technology for food preparation, and effects of foods on human health. The specific activity of our groups is focused on the analysis of food proteins and peptides released after hydrolysis of food processing or following gastrointestinal digestion. Proteins are separated by electrophoresis of chromatography and analyzed by HPLC coupled with high resolution tandem mass spectrometry (MS/MS). An additional topic covered by our group is the purification, isolation and characterization of plant metabolites by HPLC-MS/MS, with special emphasis for phenolic compounds.

Identification and characterization of food proteins, food-derived peptides or plant metabolites, especially phenolic compounds, using separation techniques such as electrophoresis (for proteins) or high pressure liquid chromatography (for peptides or metabolites) coupled with tandem mass spectrometry (MS/MS), at any stage of the food preparation pipeline. Analysis of compounds in raw materials or transformed foods.
