- Topic 1.3.1-2024 (IA) – Developing cost-effective and sustainable technologies adapted to Mediterranean Food Systems to decrease food loss and waste.
-
We are interested in participating in a consortium to build a proposal for reduction of food loss and waste. In our laboratory, as a research team, we conduct studies on the production of edible films, nanofiber through electrospinning and electroblowing. Additionally, we focus on monitoring the physical, chemical, and sensory aspects of food throughout its shelf life, as well as encapsulation studies for food waste valorization. Our research group also investigates the extraction of bioactive components such as proteins, polysaccharides, starch, phenolic compounds, etc., and explores their in vitro digestibility.
