we are looking for a consortium who needs partners with a deep-rooted experience in food biochemistry (structure, digestibility, bioavailability of molecules and their biological effects in cell cultures; food proteins and their modifications during processes, food enzymology), food and industrial microbiology (selection and application of food-grade bioprotective strains; utilization of food waste and lost for biomass production and/or high-value bioactive compounds; growth of medicinal mushrooms on agro-food wastes) and shelf-life and packaging.
