The research and innovation project aims to optimize the camel milk value chain by reducing losses and waste at each stage of the process. The focus is on improving hygienic quality from production, with specific awareness initiatives targeting milking stakeholders. Simultaneously, extending the shelf life of dairy products is considered through transformation processes and conservation using renewable energy. We explore solutions to optimize distribution networks, including biodegradable packaging and innovative methods for dairy effluent treatment. A thorough assessment of health impacts and nutraceutical properties of processed dairy products, especially those undergoing fermentation, is a crucial component of the project. We aim to fully understand how these products can positively influence consumers' microbiome, emphasizing our commitment to overall health and well-being. Ultimately, the goal is to promote the emergence of a sustainable camel milk sector involving all stakeholders from production to consumption. Partnerships are sought to develop this approach holistically.
