We are interested in submitting a proposal on novel antimicrobial food packaging and coating materials; we are available to act as either coordinator (being fully supported by the Technological transfer office of our university) or partner. Our research activities focus on rheological and physical characterisation of complex systems in food area (hydrogel, organogels, emulsions – both structured and unstructured), preparation and characterisation of edible coatings and films based on biopolymers added with antimicrobial/antiviral agents. We can perform both mechanical and physical investigations on film-forming solutions and final films and antimicrobial activity tests.
