AZRRI is organized into five sectors: Centre for the Development of Rural Entrepreneurship, Centre for Olive Oil Production, Centre for Sustainable Livestock Breeding, Centre for General Affairs, Finance and Accounting, and, the Centre for Education, European and Institutional Cooperation.
The Educational Gastronomy Centre of Istria, established within the European project KEY Q, was founded in 2013 as part of AZRRI and since then has become the centre of excellence that aims at safeguarding and developing high-quality agri-food products by strengthening the links between agriculture, gastronomy and tourism. From 2014 to 2020, more than 1200 participants, 115 cooking classes, and 300 catering facilities were involved in the didactic kitchen activities.
