Ankara University, which was established on June 13th, 1946 as the first university of Turkey, is one of the leading universities. The project will be conducted in Food Engineering Department of Ankara University. The foundation of the department, which was the first institution on food science in Turkey, dates back to 1933. This history of the institution resulted in a great capacity of research. A huge number of research projects are carried out in the department. These projects are mainly focused on chemical composition of food, food microbiology, food safety, shelf-life study of food, process improvement, and product development. Within the department, staff of unit operations group who will be involved in the project have extensive experience on food waste treatment, novel technologies to be used in unit operations, food packaging, food safety and sustainability. Their expertise can be extended to optimization and its application on food engineering operations.
