We are looking for partners for our consortium ‘REFOODIAC project’
REFOODIAC-Repurposing Alternative Proteins for Novel Functional Foods Livestock rearing is one of the main protein sources for human diet. However, there are rising concerns about its negative human health. Overconsumption of meats has been linked to numerous negative health impacts, including increased risk of heart disease, obesity, stroke, increased risk of certain cancers and type 2 diabetes. The World Health Organization has also declared processed red meat as potential carcinogenic to humans. Moreover, the livestock production has an inevitable damage on climate by generating a large amount of greenhouse gas emissions and depleting natural sources. Considering the limitations of livestock rearing, alternative protein sources and repurposing of by/waste products needed to be introduced into food/feed value chain. The REFOODIAC Project aims to produce microbiome modulator functional foods (yogurt, chocolate, protein bars, healthy snacks and supplements) from different protein and by/waste sources (legumes, microalgae, olive seed and whey, but not limited to) by a novel bifidobacterial enzymatic reaction that improves the digestibility and compatibility with human microbiome of proteins. The project will be based on 7 working packages; WP1. Management. WP2. Protein extraction/isolation from various alternative sources from legumes, microalgae, olive seed and whey. WP3. Protein modification by a novel bifidobacterial enzymatic reaction. WP4. Production of novel functional foods; yogurt, chocolate, protein bars, healthy snacks and supplements by using isolated novel proteins. WP5. Bio-accesibility, bioavailability and functionality of the products by in vitro and in vivo studies. WP6. Safety, sensory and social acceptance studies. WP7. Economic aspects and Marketing strategies. WP8. Dissemination. We are mainly looking for partners for WP6 and WP7 (but not limited to) as well as universities, research centers and SEMs. Feel free to contact us further information regarding the proposal.
