INURA (the University Institute for Research on Agricultural Resources) is coordinating a consortium under this topic. The main objective of our proposal is to enhance recipes that are part of the Mediterranean diet in order to make them attractive and healthy. These recipes will be based on local and traditional ingredients of the Mediterranean diet rich in bioactive compounds or enriched with bioactive compounds obtained from by-products of native varieties. New healthy and sustainable processing technologies that preserve the content of essential compounds and comply with circular economy principles will be used.
We are looking for a expert partner in media, TV programmes, awareness campaigns in schools and communities to be involved in the proposal.
