I am seeking a consortium who plan to submit a proposal under the topic of valorizing the health benefits of Traditional Mediterranean food products.
I joined Food Engineering Department of Ordu University as an Assistant Professor in 2008, after completion my Ph.D. and Post-Doctoral studies in Food Science Department at Purdue University (USA).
My expertise is on mainly carbohydrate (dietary fiber) chemistry and gut microbiome. My current research projects are mainly to determine the effects of fine chemical/physical structures of dietary fibers (analyzed using GC-MS, HPLC, NMR) on the colonic/fecal microbiota compositions (using 16S rRNA sequencing) in vitro and in vivo (mainly rodent models).
